The savings of a Custom Cut Beef is only possible because you own the animal before harvest - it cannot be re-sold to the public - thus, the overbearing bureaucracy of the USDA is bypassed resulting in tremendous savings to the consumer.

Ordering Process

In accordance with the California Department of Food and Agriculture (CDFA) rules, the purchasing a Custom Cut Beef from SonRise Ranch is a multi-step process.

The entire transaction can be completed using this webpage. You must fill out all the required fields (marked with a red *) and complete the checkout process for this transaction to be complete and legal.

First, the live beef must be purchased, then a brand inspection must be conducted by a state brand inspector legally transferring the title of ownership to you, the customer. You may also specify that the beef is to be evenly split with one other person - to do this, select "Two Owners" from the box below and include the other owner's full legal name.

Once this is done, the Cutting instructions, below are transmitted to the custom butcher.

Next, your animal (as you now own it) is transported (under agreement with us at SonRise Ranch), then Harvested and Aged for your specified number of days at the processing facility where your custom cutting instructions will be carried out to your specifications.

Note - You cannot legally sell your Beef once it is processed. The other "Owner(s)" must be listed on the Brand Inspection certificate, in step one, before they can receive any of the processed beef.

The final step is the transport agreement between the Butcher and your freezer. Custom Cut Half or Full Beefs require 8 and 17 cubic feet of freezer space respectively.

Medium Beef (Live weight of 1100 to 1200 lbs)

Note: This is an adolescent Beef usually yielding approximately 372 lbs of Meat, Bones and Fat, or 348 lbs of usable cuts, not counting Bones and Fat.


Avg Size Beef (Live weight of 1200 to 1300 lbs)

Note: This is a middle aged Beef usually yielding approximately 405 lbs of Meat, Bones and Fat, or 387 lbs of usable cuts, not counting Bones and Fat.


Large Size Beef (Live weight of 1300 to 1400 lbs)

Note: This is a mature Beef usually yielding approximately 437 lbs of Meat, Bones and Fat, or 408 lbs of usable cuts, not counting Bones and Fat.

Listed below you will find an average yield for a 1300 to 1400 lb live weight Beef butchered from SonRise Ranch. These figures have quite a bit of variability in them, so please use this only as a guide.

The choices you make in the cut instructions (Part 2) will have a significant effect on the amount and type of yield you receive from the butcher. We recommend getting all cuts (offal, bones, etc.) as each is valuable and doing so prevents waste.
